Ingredients (Pie)
2 lbs of Medium Ground Beef (80/20)
2 Carrots, Grated
1 Large Russet Potatoes, Grated
2 Cloves Garlic, Grated
½ Cup Diced Onions
1/2 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground allspice
1/2 tsp Sage
1/2 tsp Salt
1/2 tsp Pepper
1 tsp Fennel Seed
1 Lipton Onion Soup Mix package
1 Cup of Warm Water
2 Pastry Shells (1 for the Top and 1 for the bottom) Example
Ingredients (Egg Wash)
1 egg
1/4 cup of water
Optional: Ingredients (Cranberry Sauce)
1 pound fresh cranberries, washed and dried
2 cups granulated sugar
1/3 cup water
1/2 tsp ground cinnamon
1/2 tsp ground allspice
½ tsp ground nutmeg
1/3 cup of Orange Juice
Preheat oven to 400 degrees Fahrenheit
In a medium-large pan, add a splash of olive oil. Cook meat and vegetables on Med-High heat, breaking up meat throughout the process. Cook until relatively browned (some pink is fine), roughly 5 minutes.
In a bowl, add Soup Mix and spices with warm water, stir until dissolved. Add to meat mixture, cook until thickened. Then let cool.
IMPORTANT: If you’re using a metal or aluminum pie dish, you’ll need to spray cooking spray along the sides and bottom of a 9″ pie dish. If it’s glass or ceramic, you don’t need to.
Line with bottom pie crust, spoon cooled meat mixture into crust. Wash top edges of pie crust with egg wash. Place pie crust on top, crimp edges, cut off excess dough, cut slits into top crust, cover top crust with egg wash.
Bake for 45 minutes, or until pastry is golden brown. Let cool for 15-20 min before cutting and serving
Sauce:
In a medium pot, combine the cranberries, sugar and water. Stir to blend. Bring the mixture to a boil over medium heat. Reduce to a simmer and add the cinnamon, allspice and nutmeg. Stir to blend and simmer for an additional 5 to 7 minutes. Some of the cranberries will burst and some will remain whole. Add the orange juice and zest, stir and allow to cool before serving.
